Chef Apple’s passion for cooking was fostered throughout her childhood on the island of Nassau (New Providence) in the Bahamas on her Grandmother’s Farm and in her Mother’s Kitchen, where meals often included produce harvested from the 6-Acre Farm. “I climbed trees, cut down sugar-cane, planted vegetables, pumped water and stirred a shit-load of home-made jams,” she says. “I can remember when my whole family would gather for meals, my Gran had 13 children, so that’s a lot of people, that’s a lot of food. Those are the things that impacted me on the importance of food.”
